Feathers
The way Forrest explains destiny is the way his mother does, “Life’s like a box of chocolates you never know what you’re gonna get” meaning that you don’t know what the outcome of your destiny could be, anything could happen basically your destiny isn’t set in stone as others, like Lt. Dan believe.
The feather shows this by the way it floats around all over the place almost being hit by the car and almost landing on an entirely different persons’ shoulder before actually landing at Forrest’s feet, his life and destiny could have been entirely different if say the feather was hit by the car or landed on that man’s shoulder.
Birds can also represent a journey or a travel and considering the feather lands at his feet in the first scene (which is also the last part of his story telling to the citizens before meeting Jenny) could symbolise that this chapter of his life has finished and that a new one is going to begin soon (When he meets Jenny and Forrest Jr.)

'BubbaGump' hat
After the Vietnam War and Bubba’s death, Forrest takes Bubba’s dream of owning a shrimping boat and keeps his promise of being a part of his business alive by starting the ‘BubbaGump’ shrimping business.
Forrest not only when he’s shrimping but in the first few scenes where he places a feather in his suitcase can be see with a ‘BubbaGump’ hat. This hat could represent the undying friendship between Bubba and Forrest as well as Forrest’s ability to live up to his promises.

Ping Pong
During Forrest’s recovery after the Vietnam War he takes up ping pong and is told by his teacher “Don’t take your eye of the ball”, which he doesn’t, not even for a second. He continues to play ping pong non-stop from then on, always training even when he had no one to train with.
This symbolises Forrest’s determination. He non-stop trained even when he was injured and recovering from the horrid things he’d seen at war and continued to march on through life.
